That's a 13" prop, for reference I'm scared silly, I've only flown trainers, big 60" trainers, but trainers nonetheless

All I have flown so far are trainer type planes too. Some times I hear people say that planes like yours here "go where pointed" which I guess means you can't just let go of the sticks and expect it to recover, but it seems to me that going where pointed would be a desirable characteristic.

Trainer airplanes typically have top mounted flat bottom wings with a high dihedral, which gives the airplane self righting characteristics, if in a bank, and you let go of the sticks, it tends to level itself out, partly from the config, and also because the center of gravity is below the wing. A low wing symmetrical airfoil will tend to stay banked, or even increase. The most acrobatic planes have symmetrical wings mounted even to the C.G.

A flat bottomed wing creates lift due to the shape of the airfoil causing a low pressure area on the top of the wing. A symmetrical wing doesn't do much to create lift so you have to use angle of attack to create a lifting force. That's why a flat bottom wing isn't so good at inverted flight or other acrobatics.
